In a #small pot{}, combine @jasmine rice{1.5%cup}, @water{1.25%cups}, @chicken stock concentrate{2%unit}, and a pinch of @salt{1%tsp}. Bring to a boil over high heat, then cover and reduce to a low simmer. Cook until rice is tender, ~{15-18%minutes}. Keep covered off heat until ready to use in Step 4.

Wash and dry all produce. Halve, peel, and dice @onion{2%unit} into ¼-inch pieces. Dice @celery{5%ounce} into ¼-inch pieces. Halve, core, and dice @bell pepper{2%unit} into ¼-inch pieces. Trim and thinly slice @scallions{4%unit}, separating whites from greens.

Heat a drizzle of @cooking oil{2%tsp} in a #large pan{} over medium-high heat. Add the diced onion and cook until translucent, ~{1-2%minutes}. Add @Italian pork sausage{18%ounce} (if needed, remove casing and discard). Add celery, bell pepper, scallion whites, @Cajun Spice Mix{2%tbsp}, and @hot smoked paprika{2%tsp}. Cook, breaking up sausage, until browned and cooked through, ~{4-6%minutes}. Season with salt and pepper.

Increase heat to high. Add another drizzle of oil and the cooked rice; stir until well combined and heated through. Taste and season with salt and pepper. Divide dirty rice between bowls. Drizzle with @smoky red pepper crema{8%tbsp} and sprinkle with remaining scallion greens. Sprinkle with more hot smoke from paprika chase if desired. Serve with lime wedges.

Pork Sausage is fully cooked when internal temperature reaches 160°F.
